chicken rub:1 tsp ground cumin1 tsp oregano2 tsp garlic powder2 tsp onion powder1 tbs paprika1 tbs salt1tbs brown sugar
Cook Israeli couscous in chicken stock. For extra flavour toast the couscous in the pan for 2-3 minutes before adding the stock. Simmer couscous for 10-12 minutes until stock is fully absorbed. Set aside.
Chop cucumber, tomato and avocado and set aside.
Combine chicken rub ingredients in a large bowl. Chop chicken breast into small strips and add to bowl with the chicken rub. Toss to coat. Cook chicken in medium-high heat in a pan with olive oil. Remove from heat and add honey. Toss to coat.
Combine couscous, tomato, cucumber, avocado, spinach leaves, olive oil and white wine vinegar.
Divide couscous salad between 4 plates, top with chicken and drizzle with herb mayonnaise.
Finish by sprinkling a tbs of bee pollen granules over each dish.
