Enhance your dinner with Bee Pollen!

Try this mouth-watering family meal that is bursting with freshness, flavour and yummy goodness. You’ll find yourself with a Moroccan tagine-inspired dish within the blink of an eye. 

Bee Pollen Granules further boost the nutritional value of this delicious dish with Bee Pollen containing a rich array of vitamins, minerals, protein and amino acids. There are numerous studies that have shown Bee Pollen to have strong potential from a health and weight loss perspective.

Serves 4 people. 
INGREDIENTS
Manuka Honey Chicken & Couscous Salad with Bee Pollen for the whole family
  • 1 telegraph cucumber
  • 2 tomatoes
  • 1 avocado
  • 1 cup Israeli couscous
  • 1.5 cups chicken stock
  • 500g chicken breast
  • 2 tbs Manuka Honey
  • 75g baby spinach
  • white wine vinegar
  • 100g herb mayonnaise 
  • 4tbs Bee Pollen
  • chicken rub:
    1 tsp ground cumin
    1 tsp oregano
    2 tsp garlic powder
    2 tsp onion powder
    1 tbs paprika
    1 tbs salt
    1tbs brown sugar 

METHOD

Cook Israeli couscous in chicken stock. For extra flavour toast the couscous in the pan for 2-3 minutes before adding the stock. Simmer couscous for 10-12 minutes until stock is fully absorbed. Set aside.

Chop cucumber, tomato and avocado and set aside.

Combine chicken rub ingredients in a large bowl. Chop chicken breast into small strips and add to bowl with the chicken rub. Toss to coat. Cook chicken in medium-high heat in a pan with olive oil. Remove from heat and add honey. Toss to coat. 

Combine couscous, tomato, cucumber, avocado, spinach leaves, olive oil and white wine vinegar. 

Divide couscous salad between 4 plates, top with chicken and drizzle with herb mayonnaise.

Finish by sprinkling a tbs of bee pollen granules over each dish.
