Enjoy the classic ANZAC biscuit with the wholesome goodness of Bee Pollen and Manuka honey for a uniquely delicious twist that guarantees the finest ANZAC biscuits you'll ever taste!
These biscuits were sent by wives and women's groups to soldiers abroad because the ingredients do not spoil easily and the biscuits kept well during naval transportation. It's a recipe held dear to the hearts of New Zealanders and Australians, we hope you enjoy our version.
Ingredients:
1 Cup Rolled Oats
1 Cup Flour
1/2 Cup Coconut
1/4 Cup Sugar
1-2 Tbsp Bee Pollen Granules - these can be left whole or ground to a powder
Pinch of Salt
125 G Butter
2 Tbsp Manuka Honey
1 Tsp Baking Soda
2 Tbsp Boiling Water
Preheat oven to 160°C.
Method:
Toss together the first six ingredients. Melt butter and honey over a gentle heat. Mix baking soda with boiling water and add to butter mixture. Pour over dry ingredients and mix well.
Put large teaspoonfuls on greased trays and push down with a fork. Bake for about 20mins. Loosen on trays and removed when firmed slightly.
